IMMUNE BOOSTING ANTIOXIDANT SMOOTHIE

 
 

If there was ever a smoothie with beauty and brains, this would be it. This gal has all of the beautifying benefits of antioxidant-rich foods, plus she’s super immunity boosting.

 

I was inspired to create this recipe earlier this year, when I found myself rundown, exhausted, and on the verge of getting sick. 

This supercharged, nutrient-dense smoothie is sure to fight off any bug that might be lurking.

 

Beets contain unique betalain and carotenoid antioxidants, which are shown to have anti-inflammatory benefits. The betalain pigments (these are what give beets their deep red colour!) are also shown to support liver detoxification, which is important for strengthening the immune system and overall good health.

In addition to nutrient-rich beets, this smoothie boasts several other immune boosting properties.

It’s high in vitamin C and antioxidants thanks to the citrus and blueberries. 

Pineapple contains an enzyme called bromelain, which can actually help support digestion and provide anti-inflammatory benefits. 

For even more anti-inflammatory benefits, I added fresh ginger and turmeric. Turmeric is best known for its anti-inflammatory benefits. The added black pepper is important, as it makes the nutritional constituents of turmeric more bioavailable and more easily assimilated for use by the body.

Walnuts are a rich source of omega-3 fatty acids. Healthy fats are important for supporting cellular function, supporting the brain, and building hormones, which are all important functions for supporting the immune system and in healing.

Finally, full-fat coconut milk provides a thick and creamy consistency to this smoothie, not to mention the high fat content makes this smoothie more satiating. It will not only boost your immune system, but you’ll reap the benefits of staying full for longer.

Combined, these anti-inflammatory and antioxidant-rich ingredients can help keep skin clear and radiant and your mental focus sharp and on point. I told you, beauty and brains.


MAKES 2 SERVINGS

2 small beets, peeled + chopped
1/2 orange, peeled + segmented
1 c. fresh or frozen pineapple, chopped
1 c. frozen blueberries
1 tsp. ground turmeric
pinch freshly ground pepper
1-inch piece fresh ginger, peeled
1 c. full-fat coconut milk
1 1/2 c. filtered water
2 tbsp. raw walnuts
5 to 6 fresh mint leaves
juice + zest of 1 lime
raw honey, to taste (optional)

 

DIRECTIONS

1. In a high-powered blender, add all ingredients and blend   until smooth.

2. Divide between two glasses. Garnish with bee pollen, chia seeds, and fresh mint, if desired. Enjoy immediately.
